Favorite Canada Goose Recipes |

Just got a huge canada to cook. Just wondered what is everyones favorite way/ways to fix'em up. Do you breast'em out or pluck them?

Jerky. That is my favorite way. Now, if you are going to cook it then breast and make chicken fired steak.

You can pluck it and put in the Turkey fryer. Just make sure you do it out side and keep an eye on it.

Well, I plucked it and roasted it with oranges, bay leaves and Thyme in the cavity. I also threw in some carrots and taters around it in the broth. Baked it for a couple hours and enjoyed some for dinner. Mighty tasty! Thanks for the recipes everybody. Might as well keep'em coming. We ain't out of geese yet. I think I may breast the next one out though, them ole geese are kind of rough to pluck.

Sorry I an a bit late on this one!! What we do is put them in a brine for 24 hours and then toss them bad boys into the smoker! We got a big smoker so we ussualy do about 5-10 geese and 15-20 ducks at a time and have a bunch of friends over for dinner!

Fried goose is the only way to go, well not really the only way but the way that i tend to go most of the time.

ducxprt: What do you use for a brine before smoking your geese. Have you ever just taken the breasts or do you pluck them and smoke the whole bird? I would like to try this using just the breasts - will it work?? How long do you smoke them and what temp. do you try and hold.
